Kneading', Moulding' and Baking

The dough is considered to be ready for kneading when it is light or approximately doubled in bulk. Unlike the first kneading, its primary purpose is not to develop gluten. It provides a more uniform distribution of the yeast and its food equalizes the temperature throughout the dough. As a result of this excess gas is driven out, and overstretching of the gluten is presented. Kneading following fermentation should be light. Being too vigorous it gives a loaf with a coarse grain and thick cell walls. No flour should be added after the first mixing and kneading because it will cause streaks in bread.

When ready to be moulded into loaves, the dough is cut into portions of the desired size, kneaded lightly and allowed to stand for about fifteen minutes. Then loaves are formed and set in a warm place to rise until approximately doubled in bulk.

The larger the loaves of bread, the higher the temperature necessary for baking.

During baking the protein coagulates making the framework of the loaf. The starch is partially gelatinized, and the sugar on the surface is caramelized, giving the brown crust. When ready, bread is removed from the pans at once to prevent steaming and softening of the crusty. The loaves are cooled uncovered on wire or wooden racks so that air should reach all sides. Cold air should not blow on the loaves as this will cause the crust to crack.
